Cooking a dinner-party roast, holiday turkey, or backyard-barbecue pork loin to precisely the proper temperature without fuss is a snap with this thermometer. You can even monitor two foods (beef and lamb, for instance) simultaneously, since two stainless-steel probes are included, each 6 inches long and each connected to a 39-inch stainless-steel wire. Here's how it works: program the tool (two AA batteries included) by selecting either "beef," "veal," "lamb," "pork," "chicken," or "turkey." Then program to rare, medium-rare, medium, or well-done. The monitor displays the proper temperature--which can be altered by pressing a button. Place the probe into, say, a turkey. Run the wire from the oven and close the door. (Door should remain closed until turkey is done so oven temperature doesn't vary.) Plug the wire into the monitor, and open the monitor's built-in stand. Set the clock to the current time. (Remember, two probes can be used simultaneously for different foods, with the monitor programmed separately for each.) The monitor constantly displays the turkey's internal temperature and elapsed cooking time. (The timer can be used independently of thermometer.) When the turkey reaches the selected temperature, an alarm sounds. Meanwhile, hook the pager (two AA batteries included) to your belt or drop it into your pocket. The pager beeps when the monitor's alarm sounds and works up to 75 feet away, liberating the cook from the kitchen. For die-hard horror fans, The Hills Have Eyes 2 is a knock-off remake/sequel that delivers a few queasy thrills. While it represents a minor improvement over the 1985 sequel to Wes Craven's 1977 original (you know, the one with the notorious "canine flashback"), it's yet another cookie-cutter exercise in death by stupidity, focusing its Aliens-in-the-desert plot on a scrappy, ill-tempered unit of National Guard soldiers who've been sent to investigate the first remake's hellish aftermath in the bomb-tested wastelands of Nevada. (Like its far-superior 2006 predecessor, this sequel was shot on location in Morocco.) Unfortunately these bickering recruits are an embarrassment to their inauthentic-looking uniforms, and their reckless inexperience (not to mention a tired, uninspired screenplay by Craven and his son Jonathan) makes them easy targets for the ravenous, irradiated mutants who dwell within a treacherous network of tunnels and caves. As the generically good-looking cast is reduced to a few terrorized survivors (which somehow doesn't stop costars Jessica Stroup and Daniella Alonso from looking like fashion models), music-video director Martin Weisz switches to auto-pilot in his dubious feature debut, serving up a basically plotless succession of grisly makeup FX by Howard Berger and his crack team of gore-mongers. A high-profile action/exploitation thriller set in the present, The Siege is really a fantasy that extrapolates from major terrorist attacks. Denzel Washington is FBI special agent Hubbard, "Hub" to his friends, whose anti-terrorist task force must track down the terrorist cells responsible for a spate of bombings in New York. His partner is an FBI agent of Arabian extraction (played convincingly by Tony Shalhoub), proving not all Arabs are bad guys--a point the film should be lauded for making again and again. Thrown into the mix is a CIA spy (played almost kittenish at times by Annette Bening), whose ties to the terrorists appear to be at the center of the conflicts. When the bombings escalate out of control, the President institutes martial law, sending in General Devereaux (played with impenetrable countenance by Bruce Willis) with tanks and troops to ferret out the terrorists. Echoes of Japanese-Americans in internment camps ring out as Arabs, including the son of the Arab-American FBI agent, are herded into a stadium. Periodic audio-montages of "man in the street" sentiments anchor the material in the present and show how serious and relevant the material is. But finally what we have is a taut and entertaining popcorn movie, giving itself the humanistic nod when it can. --Jim Gay
